Homemade nut milk

Ingredients

  • 4 handfuls organic almonds (it is very important that organic almonds are used)

  • 1 handful of Brazil nuts(selenium)

  • 1 handful of walnuts (omega 3s)

  • 1 handful of pumpkin seeds (vitamin E)

Instructions

  • Soak nuts for about 8 hours (overnight)

  • Rinse and then blend with water (about 3-4 cups). 

  • Strain with nut milk bag and then if you want to dilute it, add either water or coconut water(which will sweeten it).  This stays good for about 4 days in the fridge.  I have also noticed that it lasts longer if the container that it is kept in is left open.

As a busy mom, I recommend having a routine around making the milk each week. Based on your schedule, pick two(or more depending on family consumption) days each week, such as Sunday and Wednesday or Monday and Thursday so that you always have fresh milk in your house.

What becomes frustrating is if you run out of the milk and need to substitute with store bought milk that has no nutritional value. If you have leftover milk, then you can freeze it and use it for smoothies or other recipes where texture is not as important.

This is also a good chore to enlist your man to help. Wringing out the milk can be a bit of a chore, and requires a tight grip to get the most out of the milk. Men, like kids, need to be empowered, and lets get real, they like to feel needed. Make it your man’s job to wring the nut milk bag. He’ll feel good about his contribution to your kid’s health.

I have also tried an electric nut milk maker and have not been too impressed. The milk that comes out is more dilute and not as nutrient dense, but it does come in handy if you are making it at night time when you want the house to be quiet/if you have a new baby. We do know how loud the vita mix is.
