Vegan (or non-vegan) pesto

Ingredients

  • 1/3 cup cashew nuts (vegan) or 1/3 cup of parmesan cheese

  • 1 cup parsley

  • 2 cups basil

  • 2 cloves raw garlic

  • 1/3 cup olive oil

  • A pinch of salt

Instructions

  • Soak 1/3 cup of cashews for 30 minutes(or more)

  • Add cashew nuts and garlic to food processor

  • Blend until pulverized

  • Add 1 cup parsley, basil, olive oil and salt

  • Blend until it makes a fine paste

If you are using shredded parmesan cheese instead of cashews, you can just put everything in the food processor in one step.
