Vegan (or non-vegan) pesto
Ingredients
1/3 cup cashew nuts (vegan) or 1/3 cup of parmesan cheese
1 cup parsley
2 cups basil
2 cloves raw garlic
1/3 cup olive oil
A pinch of salt
Instructions
Soak 1/3 cup of cashews for 30 minutes(or more)
Add cashew nuts and garlic to food processor
Blend until pulverized
Add 1 cup parsley, basil, olive oil and salt
Blend until it makes a fine paste
If you are using shredded parmesan cheese instead of cashews, you can just put everything in the food processor in one step.
