Curry lentil stew

Ingredients

  • 3 cloves of garlic

  • 1 onion diced

  • 1 cup of soaked lentils (soak for 4 hours min.)

  • 1-2 potatoes peeled and cubed

  • 1 carrot peeled and sliced

  • 1/3-1/2 head of cauliflower chopped

  • 3 Tbsp Curry powder

  • Red pepper Flakes to taste

  • Salt and pepper to taste

  • 1 Large tomato

  • Veggie or Chicken bouillon cube (optional)

Instructions

  • Soak lentils (can be for 4 hrs, or overnight)

  • On low heat, cook garlic and onion in olive oil for 10 minutes.

  • Add curry and stir, cooking for one more minute.

  • Add lentils, and 1 cup of water and boil over medium heat.

  • After boiling, turn the heat down and add the chopped tomato and cook for 45 minutes.

  • Add potatoes, carrots, cauliflower, salt and pepper and cook for 15 more minutes.

  • Add more curry powder to taste.

  • Add bouillon cube if you wish.

May taste even better the next day!
