Curry lentil stew
Ingredients
3 cloves of garlic
1 onion diced
1 cup of soaked lentils (soak for 4 hours min.)
1-2 potatoes peeled and cubed
1 carrot peeled and sliced
1/3-1/2 head of cauliflower chopped
3 Tbsp Curry powder
Red pepper Flakes to taste
Salt and pepper to taste
1 Large tomato
Veggie or Chicken bouillon cube (optional)
Instructions
Soak lentils (can be for 4 hrs, or overnight)
On low heat, cook garlic and onion in olive oil for 10 minutes.
Add curry and stir, cooking for one more minute.
Add lentils, and 1 cup of water and boil over medium heat.
After boiling, turn the heat down and add the chopped tomato and cook for 45 minutes.
Add potatoes, carrots, cauliflower, salt and pepper and cook for 15 more minutes.
Add more curry powder to taste.
Add bouillon cube if you wish.
May taste even better the next day!
